October Menu


In getting down with the weight loss groove, I've picked meals for the next two weeks which are as friendly as I can make them without crying myself to sleep every night; some meals are low in fat, some will be served without the usual accompaniments or without the use of butter, some will simply be small in quantity as well as, on the whole, suitable for all the family. The proof of course is in the pudding who said pudding?!, that's just rude, considering so we shall see if weight loss, a la Helen works. Without further ado, the menu of choice:

Dinners:
Pan-fried salmon with sesame seeds and a Chinese style dressing, lightly crushed baby potatoes and stir fried vegetables. Salmon fishcakes for the little 'uns and broccoli for all.

Beef olives stuffed with savoury rice and served with roasted root vegetables with thyme.
Extra mash for the kids.

Free-range chicken roulade stuffed with savoury onion and mushroom and boiled rice.

Wiltshire ham served with poached eggs and sweet potato/potato oven wedges.

Honey roast salmon salad topped with linseeds.

Lahmacun (using leftover minced lamb sauce from freezer) and homemade bread.

Vegetable curry, boiled rice and raita (with puffy bread for kids).

Spaghetti with homemade tomato sauce, Parmesan and basil.
Carbonara for kids and Brian.

Tomato, garlic and thyme hearthbread with Italian meats & baked tomatoes.

Honey roast salmon, stir fried with peppers, onions and rice (me).
Macaroni cheese (them...!).

Fritatta with salad.

Baked Potatoes, tuna mayo, cheese, salad.

Chicken stew with whole new baby potatoes

Omelette with cous cous and green salad

Breakfasts:
Pancakes
Cinnamon buns (The only breakfast treat I shall have and since the last batch were frozen, I will have one per week as a treat with toast the rest of the time)
Toast with Jam/Marmalade
Fruit
Cereal
French Toast
Nutella Bread

Lunches:
Sandwiches
Soup
Crisps
Homemade bread
Oatcakes
Italian Meats
Fruit
Raisins

Kelly's birthday is this weekend so there will be cakes and party food and I will allow myself a sliver only. The shopping bill this week came to £88.22 so £44.11 per week. This leaves just under £12 for sundries. The party food is separate to this; I always allow an extra budget for these although some items already appear on this shopping list, e.g. bread, chicken, cucumber and crisps. The extra food will be no more than £10.

There are some items which should never be scrimped on, in my opinion, meat and coffee being two of them. As you can see from the receipt above, I saved £1.35 on the coffee. I bought my favourite brand 'illy' and a strong, fairtrade packet to try. I also purchased three cartons of Tropicana orange juice, breadsticks because the kids like them, they last for ages and they were on sale, some store cupboard items like stock cubes, handwash, wine on sale to take to Anne's on Thursday night; let's face it, I'd have paid full price for it but hey, who am I to argue with a cheaper price.

Lucy and I went to see 'Cloudy with a Chance of Meatballs' at the cinema after school. We shared a bag of cinema popcorn bought from Asda of course....you didn't think I'd pay full price didcha? and then went to the restuarant on the boat afterwards for good old fish and chips. Yes, I know I'm looking to say au revoir to 14 pounds but this had been planned and, although it sounds like an excuse, I start tomorrow. I heartily enjoyed my half of salt and vinegar drenched, bone achingly good fish and chips with ne'ery a scowl. The pickled onions were good too. T'was lovely and all the more so for knowing it was a treat. We sat outside as the sun, incredibly, was shining and drank it down with a gallon or in reality, the tiniest, totiest, weeist can of diet coke you ever did see.

Buns, pasta and randomness

The kids are sharing a room at the moment because of the painting and decorating. They are driving me round the bend. I've considered all manner of things to make them still but for the love of all that is holy, they just keep at it! They just can't stop chattering like monkeys, even with a two day ban on all electronic equipment. I've even gotten a bit of cheek; not usual in this house, I can tell ya! "I can't turn on the light for you mummy, it's electric!" with a smug grin.

I've had no choice but to pour a large glass of wine tonight what with the abuse and my sore bones....that was the yoga...my legs have seized into a permanent lotus position....I've had to crawl round the house on my ar$£, pulling myself from place to place with my upper limbs...just as well my arms are like tree trunks, what with all the vinyasas.....


I know it's a pretty crappy picture but I stole it, edited it and all in two minutes....I have wine waiting after all.

I made Nutella buns last night; they sure don't look pretty but they tasted divine. The kids bounded down the stairs, two at a time, the smell tantalising their taste buds. When I told them it was Nutella Buns, they practically fainted with happiness. I allowed them a scant half a bun each for supper but that there would be plenty, ready and waiting for breakfast. Probably the sugar rush to the head which made them so wired last night....oh dear, they had cheese and pickles tonight. It's going to be nightmares, isn't it? Sigh.


I used the schneken pastry recipe but instead of slathering over egg and milk mix with the cinnamon filling, I layered on a great big dod of Nutella instead and rolled the dough, swiss roll like and cut into slices. I let it rest for another 15-12 minutes then baked at 180 degrees Celsius for 20 minutes. The smell alone is worth it. If you are selling your home, make these. You'd sell your home three times over and for twice the cost.

I made macaroni cheese for the kids and the spinach, feta, spicy tomato pasta for us. I've adapted this from a ricotta cheese recipe and the spinach didn't exactly enthrall me....it's the smell but this is a really tasty little number. Like the Nutella buns, it doesn't look like much but totally tastes better than it looks.



Spinach & Feta Pasta


1 garlic clove, finely chopped
A pinch of dried chillies
A tablespoon of olive oil
1 tin (400g approx.) of plum tomatoes
1 tablespoon red wine vinegar
Salt and lots of freshly ground black pepper
A good handful of fresh spinach leaves
Approx. 200g feta, cubed
A handful of pine nuts, dry toasted
Linguine

Fry the garlic and chili over a medium heat in the olive oil until soft. Keep an eye on it, you don't want it to brown as it will go bitter. Add the tin of tomatoes. Do not stir yet. Leave the sauce to thicken and bubble then gently mash the tomatoes with a fork. Add the vinegar and salt and pepper and set aside.

Cook the linguine as per instructions. Steam the spinach for a few minutes above the pasta water. Drain the linguine and add to the tomato sauce, add the spinach and feta and mix. Place into serving bowl and sprinkle over pine nuts. Eat heartily.

Uniforms, Mugdock and Mud

There are promises everywhere of deals galore but the humble school uniform still ends up costing me a fortune. Three times everything soon adds up; it's not just the trousers and the shirts and the jumpers but then there's school bags, pencils, socks, hair bands, hats, a lung and a mummy's will to live.

The kids look forward to buying school uniforms so we make a day of it, usually involving ten shops to find Kelly the best jumper or Lucy the perfect hair band. Fraser just goes with the flow..."whatever, mum". We trawled the shop looking for just the right shoes for Kelly and school bags which could be customised. I resisted the urge to tell them that in our day a poly bag would have done and 'customised' meant graffiti, no matter what you called it.

We had grandpa to stay and quite a lot of trips planned over the past few days. The kids have had a ball and the rest of the week is just as busy. Next week, they'll attend the church summer school every morning, in preparation of getting up at a fairly reasonable hour for school. It's free, it's crafty and all three can attend....anyone up for coffee and cake next week, I'll meet you at the corner; it's on me!

In the meantime, I'm planning my trip to Canada and I'm really, really looking forward to it. I'll arrive in Toronto and fly out to Montreal for the weekend with the lovely Kate and Jill. Then I'll see Pauline, my old school friend who ran away with a tall, handsome Canadian and her lovely brood, one of which I haven't even met before and then possibly head to Niagara on the Lake for a tour of the wineries, a show at the famous Shaw Theatre and a slap up meal. After that, it's spa, shopping, walking, reading, swimming and cocktails. Happy sigh.

I've been walking daily, for miles at a time and yet these pesky pounds just don't seem to be shifting; actually, they are, but it's been so dang slow. I know it's supposed to be good for it to come off slowly but sheesh, come on! Months of walking every day, cutting down on what I already think of as a healthy diet and I've lost half a stone (7 pounds). I'd rather it was off than on, of course but come ON!! SHIFT, DAMN YOU, SHIFT!

We had a wonderful brunch for my mum's birthday on Sunday and afterwards I walked to Byres Road...a hub of activity in the West End of Glasgow...and sat outside Kember & Jones in the sunshine drinking their lovely illy coffee. I purchased some of their sunblushed tomatoes with oregano to have with pasta later on that evening. The family gate-crashed me chilling and we wandered around in the sunshine, stopping in Nancy Smillie and De-Courcy's Arcade along the way. When we got home, the kids, dad and Grandpa had an omelette with baked potato and salad whilst I cooked some spaghetti and mixed it with homemade pesto, the sunblushed tomatoes and a small handful of grated parmesan cheese.

Although I love the sun-blushed tomatoes from Kember & Jones, I've discovered that Tesco (a supermarket chain) sell them at half the price. I bought some and added my own oregano and they were delicious.
We walked through Mugdock wood yesterday, starting at Milngavie, the beginning of The West Highland Way. We headed up to the castle to catch frogs and newts and then for lunch at the little cafe in the courtyard. We got caught in the rain a few times but it was a brilliant walk, the kids not noticing how long it was as they were having a grand time with their pals. Fraser decided to see how deep some quick sand was though...eejit...and almost sunk in to the bog but we caught him just in time.

Monday Memories

Kelly dressed up as Jesse from Toy Story 2 on her wooden rocking horse. She must have been around 3 or 4 so around 2003. I love how happy she looks and she really got into the part!

Fraser and Lucy were just around 2 years old when this picture was taken. The expressions were just so typical of them, it has become one of my favourites, despite them sitting in the hall of our old house with bags stuffed full to be taken to the charity shop.
This was our first trip to the zoo. They were so excited to see the animals and Kelly insisted on holding on to wee Lulu's hand. Aww. Notice the double buggy at the back with a single pushchair laying on top of it; three kids under two: this was life, Jim, but not as we knew it.

Kelly's first day at school. She was not yet 5 and looked so tiny; I didn't think it possible for me to be so happy and sad at the same time.

I used this as a profile pick way back in the 90s. I was an early adopter of the internet! This was taken on honeymoon in Florida in 1996. I recognise this girl but I don't necessarily see her looking back at me anymore. My eyes are the same but that's about it.....such is life, kids and time.
