My Food Week in Pictures

The last day of summer, the sun shone with glee.   We spent the day loitering in the garden, lazing on deck chairs and enjoying the warm sun.   We had a BBQ and Brian and I stayed up to watch the sun set.   The kids, tired and excited about the return to school, smiled through half shut eyes as they wearily set of for bed, windows open to let in the cool air.

The food, as you can see, has remained light and healthy...the weather allowed us another few BBQs and we've had a busy, productive and tiring but lovely week.

The Summer's Over....

That's it, the last official day of the school holidays.   There was hollering over haircuts, spanking new school trousers  too small, brand new shoes suddenly too big.   The weather has been rubbish: rain, wind and cold....the cost, a lot; trips to the pictures, pizza, shopping and indoor entertainment-all designed to blow your mind at the minimal cost of £50 per trip, per family....roll up, roll up!  

There have been highlights; having them here has been wonderful, watching new friendships form, clubs being created and books being read.   They've baked cakes and bread and ate them with relish.   Seeing them play in the odd pockets of sunshine has been great, faces held to the sun to catch the rays as they stay out all day, coming back for dinner and juice and then running off again before the fork stops clankering on the table.

They've all grown at least an inch and have a grubby, rosy glow about them.   It seems like not the greatest summer to me, but through their eyes, it's been fantastic and filled with adventure and fun.   That's all that really matters.


Coconut Prawn (Shrimp) Curry with Noodles

Absolutely delicious; light coconut milk is used, making this a low fat but very tasty tea.   Recipe to follow.

Hearthbread pizza

Hearthbread topped with homemade tomato sauce and mozzarella, herbs and a drizzling of olive oil.   Delicious, but for kids (and dad) only right now!

Lettuce boats filled with roasted veg, olives, garlic and cured meats with a low fat dressing and mint

A great alternative to bread...well, not really, but when you're looking to loose a few pounds, then yeah, it works well!   I roasted asparagus and artichokes in a little olive oil, sea salt, mint and black pepper, filled the lettuce boats alongisde a little chopped chorizo and Parma ham.   Thin slices of cooked garlic and olives were added along with a little lemon and honey dressing.   Lovely.

New Dress Blues

I bought a new dress today from a funky new store in town; on returning home, I put on the dress to show my lovely, supportive family yeah, not so much.   I stood in front of the kids and watched their silence unfold; Fraser cocked his head to the side and declared it "old-fashioned".   Lucy kinda smirked and the words "oh dear gawd" emanated from every fibre of her being.

The kids followed me upstairs, giggling as I went to show husband.   He looked me up and down, grinned and asked "did you make it yourself?" followed by "so that's what you've been doing at all those night classes".....playing to his audience of giggling children, he went on to describe his horror in many forms which ended with me curled up under the duvet, with only eldest daughter hugs for comfort.

Sigh.

Thank gawd there's always cake.

Chocolate Cheesecake with mixed berries

I had friends over at the weekend and I served antipasti with basil pesto, sunblushed tomatoes, brie, fresh bread, dipping oil, olives and balsamic vinegar, Parmesan, a variety of tarts including caramelised red onion and goats cheese, artichoke and mint, goats cheese and pesto, asparagus and cheddar.   There was also lasagna, pasta Bolognaise, macaroni cheese, green salad with a honey and balsamic dressing all followed with apple pie, chocolate cheesecake, extra thick double cream and Colpi ice cream.   Twas a great night and no-one went hungry!

Fried Prawn Patties

I had a lovely lunch with Maureen today; well, when I say lovely, it was grand to see her but the Burnbrae has been bought over by some cost cutting, penny pinching morons who provided us with half the portion of food we were used to and decided on a 'half hot half cold' theme when providing grub. When asking for a latte, they informed us that it was instant coffee for now. Bill please. We headed to Costa for a proper cup of the black stuff.

So, hunger set in rather quickly on my return and on searching the freezer for some sustenance I uncovered frozen, raw prawns (shrimps) hidden at the back. What to do, what to do? I could stir fry, breadcrumb, curry or chop. Saute, flambe, souffle or plop. Hmmm. Skewered? Fried? Fried! I had a brainwave.

First job was to defrost the prawns. Obviously, fresh prawns would be better but hey, when hungry and frugal, frozen will do.

I shelled the prawns, shoved them in a blender alongside a finely chopped clove of garlic and 2 finely chopped spring onions. I added half a teaspoon salt, a good grinding black pepper, a little cayenne and 60g plain flour. If using Nigella's recipe, you'd add 4 teaspoons of sherry as well but I prefer wine to the mix. I then added water and mixed to make a thick batter, covered with clingfilm and waited 1 hour.

During this hour, I continued painting; I have been decorating. I have one room half completed, five more to go. Why do I start these things? Kelly is moving into the big room so she was first; after some deliberation, she decided on lilac for one wall, magnolia for the rest. She then decided she wanted painted onto the wall, a girl holding a baby dove, looking over at a mummy dove on a branch........yes, this is what she decided. HUH?? Was my first response. What the freakin'......?? my second. "Ooooookay, Kelly" I said "I shall do my best". Well, it's finished, for better or worse....




So, the hour has passed and I heat some olive oil in a pan. I take teaspoons of the mix and fry in the oil, turning after a minute and cooking on the other side. When brown on both sides, place onto plate covered with paper towels.

I like to make homemade mayo for this but Hellmans will do the job just as well! Add some lime and fresh coriander though. If not partial to mayo, squeeze some lime juice over the tasty little blobs and eat immediately. Bleedin' luverly.

Tomorrow is the big silver wedding anniversary party. My friend Sam did the cake:


Isn't it wonderful? I know you can't see the whole thing, I was not averse to pulling it out and setting it up for your perusal but you just know what would happen, don't you? Especially with three wee acrobats around. I shall take some more pics at the event and report back on the deliciousness of this tasty baked lovely.

Weekly Shopping List 29th May-5th June 2009

It's that time of year, folks, the time when the sun starts to shine, the shorts come out and Helen realises that she needs to shed a few of those extra pounds. So, tis diet time. I'm loathe to call it a diet though as I can't and won't (I won't, I won't! Ok, yes I will) stick to a ridiculous plan designed to make my belly ache and my face droop. Of course, losing weight is simply about cutting down and exercising more, and less about making home-made chips late in the evening (not me!) and possibly...possibly reducing that pesky wine intake (sorry, girls).

This weeks list takes the above into consideration:

Pasta Fest
Penne with 2 cheese sauce and home-made garlic bread
Fusilli with Helen's tomato sauce, basil and Parmesan

Ginger and Lemon Roast Chicken with couscous and salad

Sugar Spiced Salmon with fresh vegetables (Helen & Brian)
Salmon Fishcakes (Kids)

Chinese Chicken and Rice with broccoli

Prawns with Garlic and Chilli (Helen)
Sausage and Mash (Brian and kids)

Chicken and Rice Soup, Sandwiches and Salad

Home-made Fish and Chips
(Helen's without batter and sweet potato oven wedges for all).

Lunches will be antipasti, sandwiches and soup for all. Breakfast will be a mix of cereal, toast, pancakes, crepes and waffles with scrambled eggs.

Chocolate cupcakes with chocolate icing will be the the only baking this week; to achieve a goal, you must first limit the temptation. Do I need to cancel the pub on Thursday? (Hears the chortling around Glasgow).
